Fish Tacos

Delicious + Delicious = Delicious.

The simplest advice is often the best. And of course this advice comes from a mother. Not my mother (although she does give the best advice). No, this advice is from Lucas Sin’s mother. Lucas Sin is a restaurateur in New York (follow him @lucas.sin) whose at-home Chinese cooking has been a top distraction of quarantine. I don’t even remember what he was making when he said “Delicious + Delicious = Delicious,” but the principle has stuck with me for giving a name to something so elementary. 

We apply it here to fish tacos: 

Rice + butter = delicious. 
Beans + onion + garlic + spices = delicious. 
Jalapeño + garlic + lime + brown sugar = delicious. 
Fish + garlic + spices = delicious. 
Tortilla + fish + rice + beans + sauce + avocado + sour cream = delicious.
(Tequila + lime juice + simple syrup = bonus delicious.)
