Digaag Qumbe (Yogurt Coconut Chicken)

This was a short and sweet recipe, yet it hit all the high notes.

I got to use my mortar and pestle. I got to redeem sieves for myself (I had sworn them off at Thanksgiving).  I got to use my blender. I got to use my favorite yogurt. I got to use my tomato paste from the tube (more on why that matters here). I got to use my Dutch oven. I got to use coconut milk. I got to eat potatoes. I got to appreciate a banana served alongside dinner and not just for breakfast (another example of delicious + delicious = delicious, cc: fish tacos).

So in honor of this short and sweet recipe, I’ll keep this a short and sweet post. Just a small moment of gratitude for so many of my kitchen favorites all in one recipe. What could be better?
